<image:title>All Recipes - Pork Tenderloin Salad - The trick to this salad is to make sure the meat gets flavor, so marinating it, and cooking it in just a portion of the marinade so the pork has a chance to brown and caramelize a bit. This is also a great salad for a crowd, if you substitute already cooked chicken, (like the kind you get a Costco), skip the marinading and cooking steps and just pour the ingredients in a bowl and dress.</image:title>

<image:title>All Recipes - Roasted Potato and Leek Soup - Leeks have become one of my favorite vegetables, giving dishes a subtler, sweeter flavor than onions do. Pairing them with potatoes, also lighter on the flavor scale, allows each flavor to shine, and creme fraiche, which is now available in most grocery stores (although you may need to hunt for it) gives this soup a little zing that keeps it from being stodgy.</image:title>

<image:title>All Recipes - Velute Sauce - Velute Sauce is one of the five Mother Sauces from classic cooking. Similar to Bechemal (white sauce), another Mother Sauce, this sauce is used as a base for cream and cheese sauces, and most often, soup bases. To this base you can add any vegetable, cheese, herb, or fish or chicken for a creamy, deeply flavored soup. For stronger-flavored vegetables like asparagus and broccoli, just boiling them in the Velute base until cooked is fine. Lighter-flavored veggies like artichoke bottoms or mushrooms may need to be sautéed to add flavored. You can puree the soup for a creamy smooth soup or leave with chunks of vegetables. Add sour cream, creme fraiche, or cheese to enhance soup, as well as many herbs. Be creative.</image:title>

I usually just open my cheese drawer and take out whatever cheese is in there and looks like it would taste good together. Use this recipe as a kind of Mac and Cheese template to add or subtract whatever kind of cheese you like and go from there. Also, if you prefer a more creamy mac, skip Step 1, in Step 2, put your noodles into a large serving bowl rather than a baker pan, and stop at Step 8 and serve. (No bread crumb topping). If you prefer crispy edges and a drier mac, make the recipe as written.</image:title>

<image:title>All Recipes - Bechamel (White) Sauce - This is another of the five Mother Sauces of classic cooking. It is the most basic of them, and one that almost everyone who cooks even a little is familiar with. It is the basis for all creamy sauces, and by the addition of various ingredients can go from the most elegant decadent sauce over a delicate poached salmon to a beer cheese for dipping pretzels. A bechamel can make a quick meal out of odds and ends in your fridge, or be the basis of your own home made mac and cheese.</image:title>

<image:title>All Recipes - Dutch Baby Pancakes - As with popovers and Yorkshire Pudding, the secret of a successful Dutch Baby is to make sure the pan and butter are very hot before you add the batter, so that a skin of cooked batter immediately forms on the pan when the batter is poured into it. This causes the steam to go up rather than behind the pancake and caused that lovely puffiness that makes these pancakes a morning showstopper.</image:title>

<image:title>All Recipes - Homemade Butter with Herbs - It is likely that if you whip cream with any regularity, you have either made, or come close to making, butter by accident. It truly is as easy as whipping cream too far until it separates into solids and liquids. The flavor of home-made butter is far superior to that which is available in supermarkets, and very close to the expensive European butters available in specialty stores. Adding herbs, shallots, or other flavorful foods and spices take this butter to a new level, and can make a very simply prepared meat, fish or vegetable into something special.</image:title>
